Cheese Making (2 Types)

Cheese Making (2 Types)
Date: Wed Jan 23

Instructor: Joann Mancuso

Time: 10am-12:30PM
Price: $30

Making  cheese was a very effective way to preserve milk which was very  perishable. A typical farmstead cheese producer would skim off the cream  to make butter and then use the rest of the milk for making cheese.  From the collection of supplies by oxcart, to the milking of the cows,  to the hauling of the milk, to the churning of the butter and the  pressing of the cheese, cheese making in the early days: at home on the  farm all across America was and still remains today difficult, hard  work. Until the birth of the “cheese factory” across America, the role  of women was to carry on the difficult cheese making tradition of making  cheese at home on the farm. Dairy cows were first brought to America in  1611 through Jamestown, Virginia. By the 1800s, they were being sold to  North Florida plantations in Leon and Jefferson counties. However,  these plantations used the milk from their dairy cows for their own  families and households. In the late 1800s, dairies started selling  their products to people in cities. Florida ranks 1st in the Southeast  and 19th in the U.S. in milk production
In this cheese class you will learn how to make mozzarella and ricotta cheeses from scratch.

Safety glasses will be provided for those who need them
Please bring a double boiler or you can make one with a covered pot and a fry pan that will hold 1/2 gallon of milk.
